Ingredients:
- 2/3 cup light brown sugar
- 1 Tbsp. coarsely ground black pepper
- 3/4 tsp. cayenne
- 1/3 cup pecans, chopped
- 1 lb. thick-cut bacon
Directions:
- Preheat oven to 375 F. Line a large baking sheet with foil.
- In a shallow bowl, stir together brown sugar, pepper, pecans and cayenne. Working with one slice of bacon at a time, coat both sides in the brown sugar mixture and arrange in a single layer on the prepared baking sheet with cooling racks on them.
- Bake until the bacon is done and browned on the edges, 25 to 30 minutes, giving the pan a half turn halfway through cooking.
- Remove sheet from oven and rest for 5 minutes.
- Transfer the bacon to a sheet of wax paper to cool completely, about 20 minutes. The bacon will crisp more as it cools.
