Candied Bacon

Ingredients:

  • 2/3 cup light brown sugar
  • 1 Tbsp. coarsely ground black pepper
  • 3/4 tsp. cayenne
  • 1/3 cup pecans, chopped
  • 1 lb. thick-cut bacon

Directions:

  1. Preheat oven to 375 F. Line a large baking sheet with foil.
  2. In a shallow bowl, stir together brown sugar, pepper, pecans and cayenne. Working with one slice of bacon at a time, coat both sides in the brown sugar mixture and arrange in a single layer on the prepared baking sheet with cooling racks on them.
  3. Bake until the bacon is done and browned on the edges, 25 to 30 minutes, giving the pan a half turn halfway through cooking.
  4. Remove sheet from oven and rest for 5 minutes.
  5. Transfer the bacon to a sheet of wax paper to cool completely, about 20 minutes. The bacon will crisp more as it cools.
