Ingredients:
- 1 cup room temperature butter
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs (room temperature)
- 1 1/2 cups flour
- 1/4 teaspoon salt
Directions:
- Preheat the oven to 350 F. Line 2 cookie sheets with parchment paper and set aside.
- With an electric mixer, beat the butter and sugar until light and fluffy in a mixing bowl. Add the egg and vanilla and beat until well blended.
- Add the flour and salt. With the mixer on low speed, beat until well mixed.
- Spoon dollups of the dough onto the cookie sheets about 2 inches apart to allow them to spread as they bake.
- Bake for 8 to 10 minutes, or until the cookies are lightly browned around the edges.
- Remove and let rest on the pan for 5 minutes before moving them to a cooling rack to cool completely.
