Brown Edge Cookies

Ingredients:

  • 1 cup room temperature butter
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs (room temperature)
  • 1 1/2 cups flour
  • 1/4 teaspoon salt

Directions:

  1. Preheat the oven to 350 F. Line 2 cookie sheets with parchment paper and set aside.
  2. With an electric mixer, beat the butter and sugar until light and fluffy in a mixing bowl. Add the egg and vanilla and beat until well blended.
  3. Add the flour and salt. With the mixer on low speed, beat until well mixed.
  4. Spoon dollups of the dough onto the cookie sheets about 2 inches apart to allow them to spread as they bake.
  5. Bake for 8 to 10 minutes, or until the cookies are lightly browned around the edges.
  6. Remove and let rest on the pan for 5 minutes before moving them to a cooling rack to cool completely.
