Ingredients:
- 4 large eggs
- To taste Kosher salt and pepper
- 1 Tbsp. olive oil
- 4 slices extra-sharp cheddar cheese
- 4 English muffins or bagels, toasted
- 1 cup baby spinach
- 4 thin slices ham or cooked bacon
Directions:
- In a bowl, beat eggs with 1 tablespoon water and ¼ teaspoon each salt and pepper.
- Heat oil in a large non-stick skillet on medium heat.
- Add eggs and cook, stirring with a rubber spatula every few seconds, to desired doneness.
- Spoon onto bottom half of each muffin and top with cheese, spinach and protein.
- Top with remaining muffin half.
