Blue Cheese Stuffed Burgers

Ingredients:

  • 2 lbs. lean ground beef
  • 3 oz. cream cheese, softened
  • 1/3 cup crumbled blue cheese
  • 1/3 cup bacon bits
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1 lb. fresh mushrooms, sliced
  • 1 Tbsp. olive oil
  • 1 Tbsp. water
  • 1 Tbsp. Dijon mustard
  • 6 hamburger buns, split
  • 1/4 cup mayonnaise
  • 6 Romaine leaves

Directions:

  1. Shape beef into 12 thin patties.
  2. Combine the cream cheese, blue cheese and bacon bits; spoon onto the center of six patties. Top with remaining patties and press edges firmly to seal.
  3. Combine the salt, garlic powder and pepper; sprinkle over patties.
  4. Grill burgers, covered, over medium heat or broil 4 inches from the heat on each side until a thermometer reads 160 F and juices run clear, 5 to 7 minutes.
  5. Meanwhile, in a large skillet, sauté mushrooms in oil until tender. Stir in the water and mustard.
  6. Serve the burgers on buns with mayonnaise, romaine, tomato and mushroom mixture.
