Ingredients:
- 1 15oz. can low sodium black beans, drained and rinsed
- 1 15oz. can pineapple tidbits in natural juice, drained but reserve juice
- 1 cup diced bell pepper
- 6 green onions, thinly sliced
- 1/4 cup cilantro leaves, chopped
- 1/4 cup reserved pineapple juice
- 1 Tbsp. canola oil
- 1 seeded jalapeno pepper minced
Directions:
- Combine all ingredients in a bowl. Toss and serve.
