Banana Sour Cream Bread

Ingredients:

  • 3¼ cups white sugar, divided
  • 3 tsp. ground cinnamon, divided
  • ¾ cup butter
  • 6 very ripe bananas, mashed
  • 16 oz. container sour cream
  • 3 eggs
  • 2 tsp. vanilla extract
  • 4½ cups all-purpose flour
  • 3 tsp. baking soda
  • ½ tsp. salt
  • 1 cup chopped walnuts

Directions:

  1. Preheat oven to 300 F. Grease four 7-by-3-inch loaf pans.
  2. Mix 1/4 cup sugar and 1 teaspoon cinnamon together in a small bowl until well combined; dust the greased pans lightly with sugar mixture.
  3. Beat remaining 3 cups sugar and butter together in a large bowl with an electric mixer until smooth.
  4. Add mashed bananas, sour cream, eggs, vanilla and remaining 2 teaspoons cinnamon; continue to beat until well-blended.
  5. Add flour, baking soda and salt; mix until just combined.
  6. Stir in walnuts and divide batter evenly into the prepared pans.
  7. Bake in the preheated oven until a toothpick inserted in center comes out clean, about 1 hour.

  1. I think the recipe could be cut in half.
    I made X-large Muffins instead of loaves, which seem to go better in my house. I baked them about 50 minutes. Adjust your time according to your oven.
