Baked Spaghetti

Ingredients:

  • 16 oz. pkg. spaghetti
  • 1 1/2 lbs. ground beef
  • 1 medium onion, chopped
  • 24 oz. jar pasta sauce
  • 1 tsp. Italian seasoning
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 5 Tbsp. butter, melted
  • 2 cups cottage cheese
  • 4 cups shredded mozzarella cheese
  • Optional chopped fresh basil

Directions:

  1. Preheat oven to 350 F. Cook spaghetti according to package directions for al dente.
  2. Meanwhile, in a large skillet, cook beef and onion over medium heat for 6 to 8 minutes or until onion is tender and beef is no longer pink, breaking meat into crumbles; drain. Stir in pasta sauce and Italian seasoning; set aside.
  3. In a large bowl, whisk the eggs, Parmesan cheese and butter.
  4. Drain spaghetti; add to the egg mixture and toss to coat.
  5. Place half the mixture in a greased 13-by-9-inch baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Place baking dish on a rimmed baking sheet.
  6. Cover and bake for 40 minutes. Uncover and bake for 20 to 25 minutes longer or until heated through.
  7. Let stand for 15 minutes before serving. If desired, sprinkle with basil.
  8. Serves about 12, doubles easily.
