Baked Oatmeal with Maple Syrup

Ingredients:

  • 1 overripe banana
  • 2 cups low fat milk
  • 2 large eggs
  • ⅓ cup maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ¼ tsp. salt
  • 3 cups large flake rolled oats
  • Toppings blueberries, raspberries, chopped strawberries, chocolate chips, or nuts

Directions:

  1. Preheat oven to 350 F and grease an 8-by-8-inch or 9-by-9-inch pan with non-stick spray.
  2. In a large bowl, mash banana. Add milk, eggs, maple syrup and vanilla and whisk well.
  3. Whisk in baking powder, cinnamon and salt. Add oats and stir until combined.
  4. Add in fruit, chocolate chips or nuts at this point or sprinkle them on top.
  5. Bake, uncovered, for 25 to 30 minutes, until the edges are set and light golden brown.
  6. Serve warm or refrigerate to serve later up to 3 days.
  7. To freeze: bake as directed and cool completely. Store in an airtight container in the freezer for up to 3 months.
  8. To reheat baked oatmeal from the fridge, microwave or warm in the microwave until heated through.
  9. To reheat baked oatmeal from frozen, bake at 350 F in the oven or wrap individual slices in a paper towel and warm in the microwave until heated through.
