Bacon-Wrapped Corn on the Cob
Ingredients:
- 6 corn on the cob, husked and ends cut
- As needed olive oil or butter flavored non-stick spray
- To taste pepper or choice seasoning
- 12 slices bacon, one for each half ear
Directions:
- Cut clean corn cobs in half. Apply olive oil to the corn to help seasoning stick. Apply seasoning to the entire surface of the corn.
- Stretch a slice of bacon until it’s about 18 inches long. Wrap the bacon around the corn starting at one end and finishing on the other end. It’s okay if a few kernels are showing.
- Set up your smoker for cooking at 275 F using indirect heat. Use the smoker’s water pan.
- Place bacon-wrapped corn on the grate and let it cook with choice of smoke for about 1 hour or until the bacon has a nice finish and the kernels of corn are soft when you press on them.
