Bacon Cheddar Potato Skins

Ingredients:

  • 4 lg. baking potatoes, baked
  • 3 Tbsp. canola oil
  • 1 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. paprika
  • 1/8 tsp. pepper
  • 8 bacon strips, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 4 green onions, sliced

Directions:

  1. Preheat the oven to 475 F.
  2. Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-inch shell. Place potato skins on a greased baking sheet.
  3. Combine oil with seasonings and brush over both sides of the skins. Bake until tender, about 5 minutes on each side.
  4. Sprinkle bacon and cheddar cheese inside the skins. Bake until the cheese is melted, about 2 minutes longer.
  5. Top with sour cream and onions. Serve immediately.
