Ingredients:
- 3 eggs
- 2 cups sugar
- 1 cup oil
- 2 Cups shredded zucchini
- 2 tsp. vanilla
- 20 oz. crushed pineapple, drained
- 3 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. cinnamon
Directions:
- Preheat oven to 325°.
- Spray 2 loaf pans with cooking spray, lightly flour. With a mixer, combine eggs, sugar, oil, zucchini, vanilla and pineapple.
- Add flour, baking soda, salt, baking powder and cinnamon.
- Mix well.
- Pour into 2 loaf pans.
- Bake for 1 hour or until a toothpick inserted in the center of the pan comes out clean.
- Cool on a rack for 15 minutes, then remove from pan to cool completely.
