Ingredients:
- 3 cups flour
- 1 teaspoon salt
- 1 ½ cups cocoa
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup butter
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk
- 1 teaspoon vanilla
Ingredients for Filling:
- 1 cup butter
- 2 cups 10x sugar
- 1 cup peanut butter
- 1 teaspoon vanilla
Directions:
- Preheat oven to 350 degrees.
- Combine first five ingredients and set aside. Beat together butter and sugar. Add eggs one at a time, blending well after each addition. Add buttermilk and vanilla. Mix well.
- Add dry ingredients, blending until just combined.
- Grease cookie sheets. Scoop 1 ounce of batter and drop onto pans. Bake 12 minutes, then allow 5 minutes for cooling before removing from pans.
- Beat butter until smooth. Blend in sugar until well incorporated. Add vanilla and beat until light and fluffy.
- Assemble whoopie pies by placing heaping spoonful of filling on one side and sandwiching other side onto it.
