Ingredients:
- 1 lb. asparagus
- 1 clove garlic, minced
- 2 tsp. lime juice
- 1/4 cup canned, chopped green chilies
- 1/2 tsp. salt
- 1/2 tsp. ground cumin
- 2 tbsp. onion chopped
- 1/2 cup tomato, chopped and seeded
Directions:
- Cook asparagus.
- Drain well and place in blender.
- Add all ingredients except onion and tomato.
- Blend until smooth.
- Stir in onion and tomato.
- Chill before serving with tortilla chips or as a vegetable dip.
- Serves 16.
