Cake:
- ½ cup shortening
- ½ cup brown sugar
- 1 cup sugar
- 2 eggs
- 2 teaspoons baking soda
- 1 cup buttermilk
- 2 ¼ cups flour
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 2 cups peeled diced apple
- 2 cups chopped cranberries
Topping:
- ¼ cup brown sugar
- ¼ cup sugar
- ½ tsp cinnamon
- ¾ cup chopped nuts
Directions:
- Cream shortening, brown and white sugars. Add eggs and beat well. Dissolve soda in buttermilk.
- Combine flour, cinnamon, nutmeg, and salt. Blend in flour, alternating with buttermilk into cream mixture.
- Fold in apples and cranberries.
- Pour into greased and floured 9×13 inch pan. In another bowl, mix topping, ingredients together. Sprinkle topping on top.
- Bake at 350˚F for 30-40 minutes or until cake tests done. Watch carefully. Do not overbake.
- Serve with ice cream or whipped cream and enjoy!
