Apple Cranberry Cake

Cake:

  • ½ cup shortening
  • ½ cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 cup buttermilk
  • 2 ¼ cups flour
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 2 cups peeled diced apple
  • 2 cups chopped cranberries

Topping:

  • ¼ cup brown sugar
  • ¼ cup sugar
  • ½ tsp cinnamon
  • ¾ cup chopped nuts

Directions:

  1. Cream shortening, brown and white sugars. Add eggs and beat well. Dissolve soda in buttermilk.
  2. Combine flour, cinnamon, nutmeg, and salt. Blend in flour, alternating with buttermilk into cream mixture.
  3. Fold in apples and cranberries.
  4. Pour into greased and floured 9×13 inch pan. In another bowl, mix topping, ingredients together. Sprinkle topping on top.
  5. Bake at 350˚F for 30-40 minutes or until cake tests done. Watch carefully. Do not overbake.
  6. Serve with ice cream or whipped cream and enjoy!
