Apple Cider Pork Chops

Ingredients:

  • 4 center-cut pork chops, bone in
  • Salt and pepper, to taste
  • 2 Tbsp. canola oil
  • 1 1/2 cups apple cider
  • 3 Tbsp. packed brown sugar
  • 1 Tbsp. whole-grain mustard

Directions:

  1. Pat pork chops dry with a paper towel; sprinkle both sides with salt and pepper.
  2. In a 10-inch skillet, heat 2 tablespoons canola oil over medium-high heat until warmed.
  3. Cook pork chops in oil for about 4 minutes on each side or until golden brown. Remove from skillet.
  4. In the same skillet, add apple cider and packed brown sugar; cook to a thick, syrupy glaze until reduced by about half.
  5. Stir in 1 tablespoon whole-grain mustard; season with salt and pepper.
  6. Pour glaze over pork chops for serving.
