All-American Cheesy Potatoes
Ingredients:
- 2 Tbsp. butter
- ½ sweet onion, diced
- 2 garlic cloves, chopped
- 1 bag frozen shredded hash brown potatoes, mostly thawed
- 10 oz. can cream of chicken soup
- 1 cup sour cream
- ¼ cup Parmesan, grated
- 2 garlic cloves, minced
- 1 tsp. salt
- ½ tsp. black pepper
- ¼ tsp. cayenne pepper
- 1¾ cups grated cheddar cheese blend
Ingredients for the topping:
- ¼ cup grated cheeses
- 4 Tbsp. butter
- 1 cup panko bread crumbs
Directions:
- Preheat oven to 350 F. Spray a 9-by-13-inch dish with non-stick spray; set aside.
- Melt butter in small skillet over medium heat. Add onion and garlic. Cook until soft. Remove from heat and cool.
- Place all casserole ingredients into a medium-sized bowl. Stir to combine.
- Transfer to the sprayed casserole or oven-safe baking dish and smooth out to an even layer. Sprinkle with ¼ cup of grated cheese.
- Prepare topping: Place Panko and cheese in a small bowl. Melt butter and drizzle over top. Toss to combine. Sprinkle panko over dish.
- Transfer to oven and bake for 50 minutes or until bubbling and golden on top. Sprinkle with chopped green onions or parsley flakes.
