Southern Peach Cobbler

This recipe was inspired by the movie, Gone with the Wind.

Ingredients:

  • 4 lbs, 10 cups fresh peaches, peeled and cut into 1-1.5 inch pieces
  • 1/4 cup packed light brown sugar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. ground ginger
  • 1/8 tsp. salt

Topping:

  • 2 cups flour
  • 1/2 cup sugar
  • 1 and 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup butter, cold and cubed
  • 1/2 cup buttermilk, cold
  • Egg wash: 1 large egg beaten with 1 Tbsp. buttermilk
  • 2 Tbsp. granulated sugar mixed with 1/2 tsp. ground cinnamon

Directions:

  1. Preheat oven to 350 F. Lightly grease a 9-by-13-inch baking pan.
  2. Mix all of the filling ingredients together in a large bowl and then spread into the baking pan.
  3. Bake for 10 minutes. Remove from the oven and set aside as you prepare the topping.
  4. Whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl.
  5. Using a pastry cutter or 2 forks, cut in the cold butter until the mixture looks crumbly. Pour in the buttermilk and gently mix until combined. Take handfuls of dough and gently roll out.
  6. Place dough all over the top of the warm peach filling. Brush the top of the dough with egg wash and then sprinkle with cinnamon-sugar mixture.
  7. Bake for 40 to 50 minutes or until the topping is golden brown and peach filling is bubbling around the edges.
  8. Remove cobbler from the oven and set the pan on a wire rack. Cool for 5 minutes before serving.
