All-American Cheesy Potatoes

Ingredients:

  • 2 Tbsp. butter
  • ½ sweet onion, diced
  • 2 garlic cloves, chopped
  • 1 bag frozen shredded hash brown potatoes, mostly thawed
  • 10 oz. can cream of chicken soup
  • 1 cup sour cream
  • ¼ cup Parmesan, grated
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • ½ tsp. black pepper
  • ¼ tsp. cayenne pepper
  • 1¾ cups grated cheddar cheese blend

Ingredients for the topping:

  • ¼ cup grated cheeses
  • 4 Tbsp. butter
  • 1 cup panko bread crumbs

Directions:

  1. Preheat oven to 350 F. Spray a 9-by-13-inch dish with non-stick spray; set aside.
  2. Melt butter in small skillet over medium heat. Add onion and garlic. Cook until soft. Remove from heat and cool.
  3. Place all casserole ingredients into a medium-sized bowl. Stir to combine.
  4. Transfer to the sprayed casserole or oven-safe baking dish and smooth out to an even layer. Sprinkle with ¼ cup of grated cheese.
  5. Prepare topping: Place Panko and cheese in a small bowl. Melt butter and drizzle over top. Toss to combine. Sprinkle panko over dish.
  6. Transfer to oven and bake for 50 minutes or until bubbling and golden on top. Sprinkle with chopped green onions or parsley flakes.
