Ingredients:
- 1 cup ricotta cheese
- 3/4 cup cream cheese
- 1 Tbsp. dark rum
- 1/4 cup sugar
- 1-1/2 cups very strong espresso coffee, cooled
- 16 Ladyfingers
- 2 Tbsp. cocoa powder for dusting
Directions:
- Spray bottom of souffle dish with non-stick spray; set aside.
- Beat together cheeses, rum and sugar until light and creamy; set aside.
- Pour coffee into large shallow dish. Quickly dip one side of each Ladyfinger into the coffee and lay close together (dipped side down) in prepared souffle dish.
- Spread half the cheese mixture over Ladyfingers and dust with half the cocoa powder.
- Dip the rest of the Ladyfingers in the coffee and lay them dipped side down on top of the cocoa.
- Cover with the rest of the cheese mixture, and dust again with cocoa.
- Cover and refrigerate for at least 6 hours or overnight.
- Dust again with cocoa if needed before serving.
Optional: Using veggie peeler, shred a (refrigerated) dark chocolate bar for topping.
