Ingredients:
- 1 cup diced potatoes
- 1/2 cup sliced carrots
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1/8 teaspoon black pepper
- 3/4 cup water
- 1 can cream style corn
- 1 can evaporated skim milk
- 1/2 cup shredded low fat cheddar cheese
Directions:
- Remember to wash your hands!
- Combine potatoes, carrots, celery, onion and seasonings in a soup pot.
- Add 3/4 cup water.
- Cover and simmer for 10 minutes.
- Add corn and pepper.
- Cook 5 minutes more until vegetables are done.
- Add evaporated milk and cheese.
- Stir until cheese melts and chowder is heated through.
- Do not boil.
