This, like Boston Cream Pie, is not a pie, but a cake.
Ingredients
- 1 2-egg Cake Recipe
- raspberry jam
- 1 Pastry Cream recipe
- confectioners’ sugar, sifted
- raspberries & sweetend coconut flakes for decorating
Directions
Make cake according to directions and let cool. While the cake cools, make the pastry cream according to the recipe. When the cake is cooled, spread the pastry cream onto one layer, top with raspberry jam, and place the other layer on top. Sprinkle top with coconut flakes, top with raspberries and spring with confectioners sugar. Refrigerate until ready to serve.
