Ingredients
- 1/4 slivered almonds
- 2 tablespoons sun-dried tomatoes, chopped
- 3 cups spinach leaves
- 2 teaspoons garlic, minced
- 1 (12.3 oz.) pkg. silken, soft tofu, drained
- 1 cup soybean oil
- 1/4 balsamic vinegar
- 1/4 grated Romano cheese
- 1/4 soy sour cream
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
Directions
In blender or food processor, finely chop almonds and sun-dried tomatoes. Add spinach and garlic; blend until smooth. Add remaining ingredients; blend until smooth. Serve over salad greens or pasta.
