Ingredients
- 3 1/2 s all-purpose flour, sifted
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 2 cups canned pumpkin
- 3 cups sugar
- 2 eggs
- 1 cup vegetable oil
- 10 ozs. cinnamon chips
- 3/4 chopped apples
- 3/4 raisins
- 1 1/2 s chopped pecans
- Glaze:
- 1 cup Confectioner?s sugar
- 1 1/2 tablespoons butter
- 1/2 teaspoon vanilla
- 3 tablespoons hot water
Directions
Bread: Sift (first 6) dry ingredients together in bowl. Combine pumpkin, sugar, eggs and oil in large mixing bowl. Beat until smooth. Add dry ingredients; mix well. Fold in cinnamon chips, apples, raisins and nuts to mixture. Pour into three 9 5/8×5 1/2×2 3/4? loaf pans which have been greased and floured. Bake at 350 1 hour. Cool on wire racks and glaze.
Glaze: Mix well and pour over cooled bread. You may top with pecan halves for decoration.
