Ingredients
- 1 cup ready-to-eat 100% bran cereal
- 1 1/2 s buttermilk
- 2 egg whites
- 1/4 molasses
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1/2 oat bran
- 1 tablespoon baking powder
- 1 cup prunes, chopped
Directions
In medium bowl, combine bran cereal and buttermilk. Let stand until cereal is soft, about 10 minutes. Add egg whites, molasses, oil and vanilla. Combine well. In large bowl, combine flour, oat bran and baking powder. Stir in prunes. Pour milk mixture into flour mixture. Stir to combine; don?t overmix. Line 12 muffin cups with cupcake paper. Spoon batter into cups. Bake at 400° about 18 minutes.
