Ingredients
- 1 cup quick oats
- 1 cup flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs, lightly beaten
- 1 1/2 cups milk
- 1/4 cup canola oil
- 1 teaspoon lemon juice
Directions
Combine oats, flour, sugar, baking powder and salt in a mixing bowl. Combine egg, milk, oil and lemon juice. Make a well in dry ingredients and pour liquids in center. Stir just until moistened. Pour batter by 1/4 cupfuls onto a lightly greased griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Yields six servings.
