Ingredients
- 1 (16 oz.) can refried beans (Opt for mild rather than spicy for late-night fare)
- 1/2 reduced-fat or regular sour cream
- 3/4 bottled salsa
- 1 cup shredded Cheddar or Mexican Blend cheese
- 2 tablespoons chopped fresh cilantro, plus more for garnish

A few big handfuls of yellow corn tortilla chips
With large spoon spread out beans in ring on large microwave-safe dinner plate, leaving about 4 inches in center of plate clear. (That?s where you?re going to pile chips). Spread sour cream and then salsa over beans. Sprinkle about half the cheese and then cilantro over everything. As you build up layers, be sure to leave space in the center of plate empty.
Microwave on high 2 minutes. Remove plate from microwave, pile chips in center of plate, and sprinkle remaining cheese over chips. Return plate to microwave and nuke again on high 1 minute, until cheese has melted. Use pot holder to take plate out of oven; it will be hot. Garnish with more chopped cilantro. Serve hot.
Make this in no time. Almost everything is from a bag or a can.
