Ingredients
- 8 ounces fresh green beans, cut lengthwise into strips
- 1 water
- 1/2 teaspoon salt
- 1 (4 oz.) can mushroom stems and pieces, drained
- 1/2 onion, chopped
- 2 cloves garlic, crushed
- 1 shredded Cheddar cheese
- 1 1/2 s milk
- 3/4 buttermilk baking mix
- 3 eggs
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
Heat oven to 400°. Grease 10×1 1/2″ pie plate. Combine beans, water and salt; heat to boiling. Cool uncovered 5 minutes. Cover; cook until tender, 5-10 minutes; drain. Mix beans, mushrooms, onion, garlic and cheese in plate.
Beat together milk, buttermilk baking mix, eggs, salt and pepper until smooth, 15 seconds in blender on high or 1 minute with hand beater; pour over vegetables into plate. Bake until knife inserted between center and edge comes out clean, 30-35 minutes; cool 5 minutes. Serves 6-8.
