1 pint cherry or roma tomatoes
3 to 4 peaches 1/2 white/yellow onion 1/2 small red onion 2 banana peppers 1 yellow bell pepper 1 green bell pepper 1 clove garlic 1/4 bunch cilantro (fresh) 1 tablespoon red wine vinegar Lime juice (fresh), to taste Salt and pepper, to taste Wash all vegetables, let dry. Chop cherry tomatoes or roma tomatoes in to small bite size pieces, set in bowl. Slice peaches and chop into bite size pieces, add to tomatoes. Chop onions into small bite size pieces, add to tomatoes.Slice and finely chop banana peppers, add to tomatoes and onions. Chop bell peppers into small bite size pieces, add to tomatoes and onions. Finely chop garlic clove and cilantro, add to vegetables. Squeeze fresh lime juice and add vinegar to bowl, toss. Taste salsa and season with salt and pepper as needed.
