Ingredients
- 2 tsp. white wine vinegar
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 1/8 tsp. crushed red pepper flakes
- 3 T. – 1/4 cup olive oil
- 6 cups of salad greens
- 2 oranges, peeled and sliced
- 4 kiwis, peeled and sliced
- 1 pomegranate, seeded
Directions
Combine vinegar, salt, black pepper and red pepper flakes, whisk in oil. Toss lettuce in oil. Add fruit (either arrange on platter on top of lettuce, or simply mix fruit with lettuce in a bowl). Sprinkle with pomegrante seeds and serve.
In season from October through January, pomegranates are sensuous, healthy and have a gorgeous color. There?s been a lot of fuss over this ancient red fruit recently, and, with its delicious juicy seeds and the documented health benefits, there?s little wonder that this fruit of old is back.
