Fair French Fries

Ingredients

  • 4 large baking potatoes (about 1 lb.), peeled and cut lengthwise into fries
  • 2 cups beef broth
  • 2 cups of water
  • Oil for frying

Directions

  • Put cut potatoes, beef broth, and water into a large bowl. Cover and chill in the refrigerator for 30 minutes to 2 hours.
  • Preheat oil to 375°.Remove potatoes from the broth mixture, pat dry with paper towels until thoroughly dry.
  • Fry potatoes in batches for 5 minutes each batch, until just starting to get cook. Set aside on paper towels.
  • Add the batches of slightly cooled, partially cooked fries back into the oil. Cook until golden and browning on the edges, about 3 more minutes. Remove from oil and place on paper towels to drain any excess grease.
  • Serve immediately with ketchup, vinegar, or your favorite toppings
