Ingredients
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 3/4 cup pitted and chopped dates or raisins
- 1/2 cup pecans, chopped
- 3/4 cup buttermilk
- 3/4 cup honey
- 1/4 cup vegetable oil
- 2 tablespoons molasses
- 1 egg
Directions
In large mixing bowl, blend flour, baking powder, baking soda, salt and spices. Stir in dates or raisins and nuts; set aside. Beat together buttermilk, honey, oil, molasses and egg. Add liquid ingredients to dry ingredients, stir until just mixed. Spray a 9×5-inch loaf pan with nonstick cooking spray. Pour in batter. Bake at 325°F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool for 20 minutes. Remove from pan and cool on wire rack.
