Ingredients
- 1 (18 1/4 oz.) pkg. spice cake mix
- 2 cups tart apples, peeled and chopped
- 20 caramels
- 3 tablespoons of milk
- 1 cup pecans, toasted and chopped fine
- 12 wooden, frozen treat sticks
Directions
Allow oven to preheat to 350°. Using paper liners line each cup in a muffin tin. Prepare cake batter according to direction for cupcakes. Gently fold apples into batter. Fill lined muffin cups 3/4 full of batter. Put in preheated oven and bake 20 minutes or until toothpick comes out clean. Cool cupcakes in pan for 10 minutes. Finish cooling on a wire rack until they are room temperature. In small saucepan over low heat put caramels and milk. Stirring frequently cook for 10 minutes or until caramels have melted and mixture is very smooth. Spread caramel mixture evenly over top of all the cupcakes. Sprinkle pecans over caramel mixture. Place a stick into the middle of each cupcake and remove the paper liners before serving. Makes 12 cupcakes
One highlight of Halloween is caramel apples but they can be messy and hard to eat for children. These cupcakes take the place of caramel apples and are a lot easier to eat.
