Ingredients
- 2 to 3 lbs. chicken parts, boned or not
- 1/4 (1/2 stick) butter
- 1 packed brown sugar
- 1/2 green bell pepper, diced
- 1/2 onion, diced
- 1/4 vinegar
- 1 ketchup
- 1 bottle barbecue sauce
Directions
Melt butter in cast iron Dutch oven; crumble brown sugar and add to melted butter. Add onions, peppers, vinegar and ketchup. Simmer 5 minutes. Remove from heat; add chicken and stir barbecue sauce over it. Bake covered 30 minutes at 325° . Uncover, baste and bake 30 minutes more, basting as needed. Raise temperature to 350° for the last 15 to 20 minutes, basting frequently.
