Ingredients for the Dressing:
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. red wine vinegar
- 1/2 a shallot, finely chopped
- 1 garlic clove, finely chopped
- 1 Tbsp. dried oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
Ingredients for the Salad:
- 1 small head romaine lettuce, sliced in small rectangles
- 1 small head radicchio, core removed and sliced in small squares
- 1/2 of an english cucumber, sliced in cubes
- 1/4 of a red onion, sliced thin
- 1 cup cherry tomatoes, sliced in half
- 4 oz. salami, diced small
- 15 oz can garbanzo beans, drained and rinsed
- 1/2 cup drained pitted kalamata olives
- 1/2 cup drained sliced pepperoncinis
- 1/2 cup feta cheese, crumbled
- 2 cups shredded cooked chicken
Directions:
- Make the dressing: In a small bowl, add all the ingredients. Whisk until fully combined and let sit for a few minutes to allow the flavors to meld.
- Make the salad: In a large bowl, combine all ingredients. Whisk the dressing and drizzle it on the salad. Toss to combine.
