Mediterranean Chopped Salad with Chicken

Ingredients for the Dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. red wine vinegar
  • 1/2 a shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 1 Tbsp. dried oregano
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper

Ingredients for the Salad:

  • 1 small head romaine lettuce, sliced in small rectangles
  • 1 small head radicchio, core removed and sliced in small squares
  • 1/2 of an english cucumber, sliced in cubes
  • 1/4 of a red onion, sliced thin
  • 1 cup cherry tomatoes, sliced in half
  • 4 oz. salami, diced small
  • 15 oz can garbanzo beans, drained and rinsed
  • 1/2 cup drained pitted kalamata olives
  • 1/2 cup drained sliced pepperoncinis
  • 1/2 cup feta cheese, crumbled
  • 2 cups shredded cooked chicken

Directions:

  1. Make the dressing: In a small bowl, add all the ingredients. Whisk until fully combined and let sit for a few minutes to allow the flavors to meld.
  2. Make the salad: In a large bowl, combine all ingredients. Whisk the dressing and drizzle it on the salad. Toss to combine.
