Ingredients:
- 1 cup of plain flour
- pinch of salt
- 1/2 cup of butter
- 2 tbsp of cold water
- 1 cup powdered sugar
- 15 oz. jar of sweet mincemeat pie filling
Directions:
- Preheat the oven to 325 muffin tray with butter.
- Sift the flour and salt into a large bowl.
- Add the butter to the flour and with a pastry blender or two knives, cut the butter into the flour until small balls develop.
- Knead the pastry lightly in your hands to bring the dough together and place onto a floured chopping board.
- Roll out the pastry until fairly thin about 1/8 of an inch and cut out large circles using a cookie cutter, mason jar lid, or large mouthed glass.
- Place each circle into the muffin, tin, to line the bttom and sides. Fill them with the mincemeat. Leave a small space at the top of the pies to allow the mincemeat to bubble in the oven without overflowing.
- Bake in the oven for around 15 minutes or until the pastry is completely golden and cooked through.
- Leave to cool completely.
- Sift the powdered sugar into a small bowl and add in small drops of water while stirring until you get a thick icing.
- Spoon the icing onto the top of the cooled pies until the mincemeat is completely covered. Set aside until the icing on the pies is firm.
