Chicken Parmesan with Spaghetti
Ingredients:
- 4 boneless skinless chicken breast halves
- To taste salt and pepper
- 1⁄2 cup Italian breadcrumbs
- 1 egg, beaten
- 4 Tbsp. butter
- 2 cups spaghetti sauce
- 4 slices mozzarella cheese
- As needed parmesan cheese, grated
- 1/4 lb. spaghetti, cooked al dente
- For garnish 2 Tbsp. chopped parsley
Directions:
- Pound chicken to flatten. Salt and pepper to taste. Dip chicken in egg and then in bread crumbs.
- Fry in butter in a hot skillet, turning and browning for 10 minutes or until the chicken is done. Remove chicken from skillet.
- Add spaghetti sauce to skillet. Heat thoroughly. Add chicken back into sauce. Place slices of mozzarella on top of each chicken piece. Sprinkle with parmesan. Cover and cook until the cheese is melted. Serve with a side of spaghetti.
- Garnish with chopped parsley and more parmesan cheese if desired.
