Ingredients:
- 4 cups water
- 3 Tbsp. white miso paste
- 2 Tbsp. soy sauce
- 1 tsp. sesame oil
- Chili oil as desired
- 8 oz. mushrooms (1 pkg.)
- 2 jalapeños
- 6 green onions
- 1 chicken breast
- 2 cheap ramen packages
Directions:
- Boil 4 cups of water. Chop up mushrooms, jalapeños and green onions.
- FOR THE BROTH: When the water starts boiling add the miso paste and mix well. Once the miso paste is completely mixed in, add the soy sauce, sesame oil and chili oil. If you like a spicier ramen, more chili oil will give you the heat you want. If you’re not a fan of spicy, a couple of drops will be sufficient. Add the chopped-up vegetables and let it simmer for 5 to 10 minutes, while you cook the chicken.
- FOR THE CHICKEN: Pan fry chicken, 6 to 8 minutes each side, in a hot pan until golden brown. Shred the chicken in the pan and set aside. Next, you’ll add the noodles (I just use the noodle patties from cheap ramen packages but you can substitute with more authentic noodles if you want) to the broth and cook for 3 minutes.
- When the ramen is ready, portion it into two bowls and add the desired amount of shredded chicken.
