Brussels Sprouts with Bacon
Ingredients:
- 2 lbs. Brussels sprouts, halved
- 12 strips of bacon, cooked and chopped
- 4 cups chicken stock
- ½ cup fresh Parmesan, grated
- 2 Tbsp. olive oil
- 1 Tbsp. truffle oil
- To taste salt and pepper
Directions:
- Preheat oven to 400 F.
- Bring chicken stock to a boil in a large saucepan over high heat. Add Brussels sprouts and cook for 12 to 15 minutes. Remove Brussels sprouts from boiling stock and place on a roasting tray with parchment paper. Drizzle sprouts with olive oil and season with salt and pepper. Place sprouts in oven and roast for 12 to 15 minutes. Remove sprouts from the oven and transfer to a serving dish. Drizzle with truffle oil and garnish with bacon bits and grated parmesan. Serve immediately.
