Ingredients:
- 10 oz. bag frozen peas
- 1 cup diced celery
- 1 cup cauliflower, chopped
- 1/4 cup green onion, diced
- 1/2 cup cooked bacon, chopped
- 1 cup cashews, chopped
- 1/2 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup Ranch dressing
Directions:
- Allow peas to thaw and rinse under cold water in colander. Drain well and spread out on a rimmed sheet pan lined with paper towels to absorb excess moisture.
- In a large bowl, combine peas, celery, cauliflower, green onion, bacon, cheese and cashews.
- In a separate small bowl, stir together the sour cream and ranch dressing and add to large bowl ingredients until well coated. Refrigerate until serving.
