Ingredients:
- 1 1/2 to 2 cups Italian bread crumbs
- 2 lg. eggs
- 4 cloves garlic, minced
- 2 cups baby spinach, chopped
- 1/4 cup Parmesan, finely grated
- 1/2 tsp. dried Italian seasoning
- Kosher salt and pepper
- 1 lb. ground beef
- 2 cups spaghetti sauce, prepared
- 6 hoagie buns, toasted
- 2 cups mozzarella cheese, grated
Directions:
- Heat oven to 400 F and line rimmed baking sheet with nonstick foil.
- In a medium mixing bowl, add eggs, chopped garlic, chopped spinach, Parmesan and seasonings and mix to combine.
- Add beef and bread crumbs and mix until combined. Form into small meatballs and place on prepared baking sheet. Bake until done and browned, 20 to 25 minutes.
- In the meantime, warm spaghetti sauce in a small saucepan. Serve meatballs on toasted hoagie buns topped with cheese.
