Ingredients
- 1 1/2 cups sugar
- 2 1/2 cups cake flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cocoa powder
- 1 1/2 cups vegetable oil
- 2 eggs
- 1 cup Buttermilk
- 2 oz. Red Food Coloring
- 1 teaspoon White Vinegar
- 1 teaspoon Vanilla Extract
- Cream Cheese Frosting:
- 2 8-ounce packages cream cheese
- 6 tablespoons unsalted butter
- 1 1/2 teaspoons clear vanilla
- 5-6 cup powdered sugar
Directions
Combine sugar, flour, baking soda, salt and cocoa powder. Set aside. In another bowl, whisk together oil, eggs, buttermilk, food coloring, vinegar and vanilla. Slowly whisk in dry ingredients. Fill cupcake liners 2/3 full and bake at 350 degrees for 15-18 minutes. Top with cream cheese frosting: Soften cream cheese and combine with slightly softened butter. Beat until smooth. Add vanilla and beat well. Gradually add sugar, 1 cup at a time, beating continuously until smooth and creamy. Cover and refrigerate, if needed.
