How to make inside-out grilled cheese

I can’t begin to count the weeks of my childhood when grilled cheese appeared on the dinner menu at home. It was quick, it was easy and we loved it. White or wheat bread, slathered with butter, American cheese and a frying pan were all it took. Pair it with tomato, potato or chicken noodle soup, put the box of crackers on the table and we were set.

Grilled cheese was one of the staples in the cafeteria of the small college I attended, too. If nothing else looked edible at lunch or dinner — which was the case about every other day — at least a slightly-greasy, room temperature sandwich was edible.

Even now, grilled cheese makes its way onto my weekly dinner menu. It’s a comfort food and reminds me of home. My grandparents have always called it “toasted cheese,” which makes it sound a little more sophisticated.

How to make inside-out grilled cheese

It doesn’t take much skill to make grilled cheese, and it’s the same with inside-out grilled cheese. Once it’s finished, your inside-out grilled cheese will be crispy and caramelized.

  • About ½ cup shredded cheddar cheese (or your favorite cheddar cheese)
  • 2 slices of your favorite cheese
  • 2 tbsp. butter
  • 2 slices of bread

Directions

  1. Melt 1 ½ tbsp. in a nonstick skillet over medium heat.
  2. Place both slices of bread in skillet.
  3. Place cheese slices on one slice of bread, covering the slice.
  4. Put the other slice of bread, butter side up, on top of slice with cheese slices.
  5. Sprinkle a handful of shredded cheese on top of sandwich.
  6. Melt the rest of the butter in the skillet beside the sandwich, then flip the sandwich over onto the newly-melted butter, shredded cheese side down.
  7. Allow to cook for a few minutes, without burning.
  8. Sprinkle another handful of shredded cheddar cheese on top of sandwich.
  9. Flip sandwich to cook remaining side for a few minutes, without burning.
