MOUNT VERNON, Ohio — Whether you are a veteran deer hunter or a novice, plan to attend the “Venison: From Field to Table” workshop sponsored by Ohio State University Extension in Knox, Noble and Monroe Counties.
There will be two dates and locations for the workshop: Saturday, Oct. 3, in Knox County at 1025 Harcourt Road, Mount Vernon, Ohio (the Knox County office of Ohio State University Extension) and Oct. 17 in Noble County at 16714 Wolf Run Road, Caldwell, Ohio 43724 (at the South Central Office of Ohio State University Extension). Both workshops will begin at 10 a.m. and conclude at 1 p.m.
Topics addressed in the workshop include: field dressing the deer, a cutting demonstration, making jerky and sausage, canning and freezing venison, and cooking methods. Each topic will focus on food safety aspects as well as proper procedures.
Dr. Lynn Knipe, Extension Specialist, The Ohio State University Meat Lab, will demonstrate how to cut the meat into steaks and roasts.
Mark Landefeld, Extension Educator, Agriculture and Natural Resources from Monroe County, will discuss field dressing details.
LuAnn Duncan, Extension Educator, Family & Consumer Sciences from Knox County, and Beth Gaydos, Extension Educator, Family & Consumer Sciences from Noble and Monroe Counties, will present information on canning, freezing, and cooking venison.
Donations will be accepted at each location to cover the costs of the workshops. Class size is limited at both locations, so register as soon as possible.
